The holiday season is the perfect time to serve this homey and festive breakfast casserole. You can prepare it the night before for a quick and easy breakfast that’s affordable for a crowd.

  • 1 pound ground breakfast sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 white onion, diced
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 loaf Italian bread, cubed into large chunks
  • 18 large eggs
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese

  1. Heat oven to 400°F. Brown the sausage in a skillet over medium heat for 3 minutes, breaking it into small pieces as it cooks. Add the onion and bell peppers along with 1 teaspoon of salt. Cook until meat is browned and onion is transparent. Let cool. Drain excess oil.
  2. In a large mixing bowl, whisk together the eggs and milk. Add remaining salt, 1 teaspoon of garlic powder and cheese; stir to combine.
  3. Add the bread cubes and cooled sausage mixture to a greased 13×9-inch baking dish.
  4. Pour egg mixture evenly over the bread and sausage. Press the bread mixture down to soak up the egg mixture.
  5. Cover the dish with foil and bake for 30 minutes; uncover and bake for an additional 20 minutes. Serve immediately.
